Recipe Ingredients

For the Steak au Poivre Tacos:

  • 1 lb beef tenderloin or sirloin steak

  • 2 tbsp black peppercorns, coarsely ground

  • 1 tsp salt

  • 2 tbsp olive oil

  • 1/4 cup cognac or brandy

  • 1/2 cup heavy cream

  • 8 small corn or flour tortillas

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

For Side Dish 1: Mexican Street Corn (Elote) Salad:

  • 4 ears of corn, grilled and kernels removed

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1/2 cup cotija cheese, crumbled

  • 1 tsp chili powder

  • Juice of 1 lime

  • Fresh cilantro, chopped

For Side Dish 2: Avocado and Black Bean Salad:

  • 2 ripe avocados, diced

  • 1 can black beans, rinsed and drained

  • 1/2 red onion, finely chopped

  • 1 red bell pepper, diced

  • Juice of 2 limes

  • 1/4 cup fresh cilantro, chopped

  • Salt and pepper to taste


Recipe Preparations

Preparing the Steak au Poivre Tacos:

  1. Season the steaks generously with salt and then press the coarsely ground black peppercorns into both sides.

  2. Heat the olive oil in a heavy skillet over medium-high heat. Add the steaks and cook for 3-4 minutes on each side for medium-rare or adjust to your desired doneness.
