With its straightforward charisma Bobotie is traditionally served with yellow rice (rice cooked with turmeric) and a side of chutney. This dish is perfect for a cozy family dinner, bringing the rich and diverse flavors of South Africa to your table.


To make Bobotie, you will need:

Ingredients:

  • 2 tablespoons of olive oil

  • 2 large onions, finely chopped

  • 2 cloves of garlic, minced

  • 2 pounds of ground beef or lamb

  • 2 tablespoons of curry powder

  • 1 teaspoon of ground turmeric

  • 1 teaspoon of ground coriander

  • 1 teaspoon of ground cumin

  • 1/2 teaspoon of ground cinnamon

  • 1/4 teaspoon of ground cloves

  • 1 tablespoon of apricot jam or chutney

  • 2 tablespoons of lemon juice

  • 1/2 cup of raisins

  • 2 slices of white bread, soaked in 1/2 cup of milk

  • 2 large eggs

  • Salt and pepper to taste

  • 1 cup of milk (for the custard topping)

  • Bay leaves for garnish


Instructions:

  1. Preheat your oven to 350°F (180°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, sauté until softened and translucent.

  3. Add the ground meat to the skillet, breaking it apart with a spoon, and cook until browned.

  4. Stir in the curry powder, turmeric, coriander, cumin, cinnamon, and cloves. Cook for a few minutes until the spices are fragrant.

  5. Mix in the apricot jam (or chutney), lemon juice, and raisins. Season with salt and pepper to taste.

  6. Squeeze the excess milk from the bread slices and crumble them into the meat mixture. Stir well to combine.

  7. Transfer the meat mixture to a greased baking dish and smooth the top.

  8. In a bowl, whisk together the eggs and 1 cup of milk. Pour this custard mixture over the meat.

  9. Arrange a few bay leaves on top for garnish.

  10. Bake in the preheated oven for 30-40 minutes, or until the custard is set and the top is golden brown.

  11. Allow the Bobotie to rest for a few minutes before serving.
